What’s the BUZZ about Quinoa?

Most of the world’s Quinoa is produced in South America. So it comes as no surprise that Sr. Maria Jesus Pinedo Aguilar, DW, a native of Peru, would have an intimate knowledge of its many vital nutrients. Classified as an ancient grain, it is a seed in the goosefoot family related to beets, chard, and amaranth. The seeds, red, black, or white, are rich in protein, dietary fiber, B vitamins, and other minerals. They are an excellent substitute for many grains due to their high nutritional value. Evidence of its use can be found dating back to some 5,000 years. It can be roasted and ground to make flour, used as a thickener, and eaten as a cereal.
